Dairy scientist with 18 months of research experience (Denmark and India) with a PhD in Dairy Technology is now seeking a challenging opportunity in the research environment of food and biotechnology industry. Currently an Invited Postdoc in Department of Food Science, University of Copenhagen, Denmark, working on a Biotechnology project “Understanding enzymatic activity in concentrated milk systems” funded by Novozymes A/S and Henning-Holck Larsen A/S. Most recent achievements with current employer involve the development and implementation of method for studying the enzyme activity in complex concentrated milk system.

• Strong ability to perform hypothesis-based scientific investigations for developing experimental protocols
• Experience in enzyme activity analysis with chromogenic substrate (process validation and analytical methods development)
• Worked with peptide analysis in concentrated milk by using LC-MS technique
• Designed and optimized the product formation process with Design of Experiment (DOE)
• Thorough knowledge of milk chemistry, milk processing (Pasteurization, Standardization, Homogenization and Fermentation) and cheese and yoghurt culture dosing
• Outstanding laboratory skills, experience of analytical method development for various dairy matrixes
• Familiar with dairy cultures for fresh fermented dairy products e.g. cheese and yogurt; production and lyophilisation of bacterial starter cultures
• Experienced in food and culture based microbiology testing methods; serial dilution, pour plating, and filtration, media preparation and sterilization, Aerobic Plate Count, Total Coliform / E. coli, Yeast & Mold
• Familiar with lab safety aspects and detailed knowledge of GMP and HACCP
• Good theory and practical experience in operation of LC/MS, HPLC, GC, Spectrophotometer, Rheometer, Texture Analyser and Scanning Electron Microscope and analysis of scientific data thereafter
• Experience of conducting moisture sorption isotherm and shelf life study on cheese and Indian dairy product
• Skilled in market and consumer research of product, quantitative data analysis, interpretation and the presentation of results
• Experienced in quantitative research methodologies and analysis techniques such as correlation and principal component analysis (PCA)
• Ability to perform appropriate scientific review of literature
• Capable of collecting and maintaining the scientific data and converting it into scientific reports and research publications
• Strong written and verbal skills of English and understanding of Danish to some extent
• Capable of project management, good teamwork skills, creative thinker and excellent presentation skills
• Advance knowledge of Microsoft Office tool (Word, Excel and PowerPoint) and statistical software SAS and SPSS
