I live in Minnesota with my husband and two little girls. Work and family keeps me busy, but travel is another passion of mine, when I get the chance. At my day job, I’m a lecturer who has become healthier by following low carb diets. As a busy mother of two, I favor recipes that are easy to prepare. Since 2010, I have been experimenting with low-carb recipes and discovered that they can be just as (if not more) delicious while improving my health. As a passion of creating quick, easy low carb recipes, I thought this low carb cookbook would be a perfect way to help others in the process.
